Honey Dijon Roasted Pork Loin – How to Cook a Pork Roast
Personally, oven roasted pork loin is my favorite method for preparing pork—it’s so simple, juicy, and flavorful! And, since I love a salty-sweet combo, I chose a honey Dijon glaze for this pork loin roast recipe. With a bit of tarragon and fresh parsley, it has a refreshingly herby and elegant taste!

How to Cook Pork Loin in the Oven
If you’re unsure of how to cook pork loin, roasting is a great option. And, you actually don’t need to cook pork all the way through. Just be sure it’s cooked to an internal temperature of 145°F, and you’ll have a deliciously tender roast with a blush pink center!
Whether you’re cooking a pork loin roast, chicken drumsticks, or a Thanksgiving turkey, a simple meat thermometer is a solid investment. It’s not necessary, but it will give you peace of mind knowing your roast is entirely cooked through and safe to serve.

Honey Dijon Pork Loin Roast

Ingredients
- 3 lbs boneless pork loin, trimmed
- salt, to taste
- pepper, to taste
- drizzle of oil
- ¾ cup Dijon mustard
- 2 Tbsp honey
- 1 Tbsp tarragon
- parsley, for topping
Instructions

Preheat oven to 375°F (180°C).

Season pork loin with salt and pepper.

In a bowl, mix Dijon mustard, honey, and tarragon. Set aside.

In a large oven-safe pan over medium-high heat, add a bit of oil and sear seasoned pork loin on all sides. (It will take about 4-6 minutes on all 4 sides.)

Brush seared pork loin with mustard sauce and cook in the oven for 35-45 minutes, until the internal temperature reaches 145°F (63°C).

Rest for 10-15 minutes before slicing, serving, and enjoying!
